Introduction

A Mexican chicken stew with lots of protein and flavor. A Mexican chicken stew with lots of protein and flavor.
Number of Servings: 6

Ingredients

    1 lb chicken breast, diced and cubed
    1 cup onions, finely diced
    1 large can of tomatillos (28oz)
    1 can of green chili peppers (7oz), mild or hot
    2 cloves garlic
    1 jalapeno pepper, diced and seeded
    1/2 bunch of fresh cilantro
    3 cups chicken broth
    1 can of black beans (15oz)
    1 tbsp olive oil
    1 lime
    Dash of salt

Directions

Heat oil in a large pot over medium heat. Salt chicken and add to the pot, browning the meat for 10 minutes.


In a blender add the tomatillos, green chili peppers, garlic, jalapeno, and cilantro. Puree this mixture.


When the chicken is done browning, add the onions and cook until they are transparent (about 2-3 minutes). Add the blended mixture and the chicken broth. Reduce heat to low and cover. Let the stew simmer for 30 minutes. Add a can of black beans and let the stew heat through. Squeeze the juice of one lime into the stew before serving.
