Ingredients

    2 c. brown rice
    2 eggs
    2 bunches fresh broccoli, chopped
    2 med. carrots, sliced
    1 c. lean ham, cubed
    4 Tbls. soy sauce

Directions

Cook rice according to package directions. While rice is cooking, scramble eggs and cook in pan coated with cooking spray. Remove from pan when done cooking and set aside. Spray pan again if necessary. Add carrots and broccoli, cook over medium until desired tenderness. Add ham, egg, and cooked rice. Stir to combine. Add soy sauce, mix thoroughly and serve hot. Makes 4 servings.

(High sodium, but very delicious and simple.)
