Ingredients

    1/2 c coconut oil
    1 c white sugar
    2 eggs (beaten)
    3-4 ripe bananas (mashed)
    1t vanilla
    1t cinnamon
    3 T milk
    2 c flour
    1 t baking soda
    1/2 t baking powder
    1/2 t salt
    1/2 t cinnamon (additional--optional)
    1 T sugar (additional--optional)

Directions

350 degree oven
lightly spray loaf pan (or mini loaf pans)

Optional: mix 1/2 t cinnamon with 1 T sugar--sprinkle in bottom of pan(s) and on top of batter prior to baking

sift together flour, baking soda, baking powder and salt.

mix coconut oil and sugar; add eggs (already beaten) and bananas (separately mashed). Add vanilla, cinnamon, milk, and sifted ingredients.

pour batter into pans. Bake approx 40 min for mini loaves and 1 hour for one large loaf.

Serving Size: makes 4 mini loaves cut into six pieces
