Ingredients

    eggplant
    green beans
    mushrooms
    onions
    asparagus
    red, green & yellow peppers
    garlic
    mint
    cilantro
    olive oil
    balsamic vinegar


Tips

Serve on rice, quinoa, multigrain bread or as part of a sandwich. Very versatile and will keep in fridge for a week or 10 days!


Directions

Slice all vegetables into desired size and then use some of the oil to lightly coat by either brushing or tossing. Roast in oven or grill on bbq. Chop garlic, cilantro and mint, add to remaining oil and the balsamic vinegar. Mix and add to vegetables. Allow to marinate overnight so that flavours will mix.
