Ingredients

3 tsp canola oil
1 package Sunrise Extra Firm Tofu (340 grams)
0.5 cup chopped raw onion
0.5 cup diced celery
0.25 cup chopped green pepper
0.5 cup chopped yellow or orange bell pepper
0.5 cup chopped broccoli
0.5 cup chopped carrot
2 cups cooked brown rice
2 tbs Lite Tamari Soy Sauce
Tips
Serve with green salad.
Makes 6, 1.5 cup servings or 4, 2 cup servings.
To spice it up, add a slight pinch or fork tong of hot ground chili paste.
I don't add extra salt as the soy sauce has lots of salt
Directions
Mcrowave carrots & broccoli for 2.5 minutes (or steam or boil until slight crisp) and set aside.
Cut tofu into 0.5 inch cubes.
Heat oil in large fry pan. Add tofu and saute until lightly browned, add onion, celery, and peppers and sautee on medium heat until vegetables are slightly soft. Add brown rice, cooked carrots and broccoli and Tamari Lite Soy Sauce. Stir until heated through.
Serving Size: makes 5, 1.5 cup servings
