Introduction

Number of Servings: 15

Ingredients

    7 medium yams, boiled
    20 oz. can crushed pineapple in pineapple juice, drained
    1 tbsp pumpkin pie spice (can use any cinnamon, nutmeg, etc. spice mix)
    1 tbsp sliced almonds

Tips

You can use bigger or smaller yams, just adjust for size, i.e. large yams, you just need 4)


Directions

1. Boil yams until soft when pierced with fork
2. Drain water, then slice yams in half width-wise and slide pulp out of skin (use paper towel to hold yams, they're hot!), use knife to cut off potato ends where necessary
3. Mash yams, then add pineapple (drain before adding), mix, add spices, mix well
4. Spoon into serving dish and sprinkle almonds on top

Serving Size: Makes 15 1/2 cup servings
