These are so yummy, filling and give you a balanced meal. These are so yummy, filling and give you a balanced meal.
Number of Servings: 1

Ingredients

    Canned Black Beans, rinsed
    Corn Tortillas
    Bell Peppers (green, yellow, red, whatever you like)
    Egg Whites
    Italian Blend Cheese shredded or low-fat cheese
    EVOO

Directions

Slice or chop bell peppers. Put 1t EVOO in pan and add bell peppers & salt & pepper, cook to softness of your liking, add egg whites and stir until whites begin to cook, add black beans until whites are cooked. Turn of heat and add 2T of cheese and stir in to melt. Warm torts however you like (I use my George Foreman Grill). Spoon black bean & egg white mixture on top of tortillas!
