Introduction

Ingredients

    12 oz fresh pink salmon (1 large fillet)
    3 cups orange juice
    1 tablespoon low sodium soy sauce
    1 teaspoon lemon pepper
    1 to 2 bags frozen spinach
    1 lemon

Tips

NOTE* do not over cook, it will dry the salmon out. At most, cook for 30 minutes.


Directions

In a large bowl or shallow pan, soak salmon in about 2 or 3 cups of orange juice. Let sit for about 10 minutes. If their is skin still on the salmon, the orange juice will loose it and you will be able to gentle pull the skin off the salmon.

Pre heat oven to 350 degrees F.

Foil line a baking sheet. Place salmon on top baking sheet. Then sprinkle soy sauce on top, and rub in gently. Top with lemon pepper, and black pepper to taste. Bake for about 25 minutes, until salmon starts to flake.

For spinach, I recommend frozen spinach, about 1 and 1/2 bags worth. Cook in microwave according to package directions. Once cooked, squeeze fresh lemon over the top, use one whole lemon. Serve with salmon.
