Ingredients

    1 cup reduced-fat low-sodium chicken broth
    1 cup shredded or diced chicken breast, pre-cooked
    1 cup fresh mushrooms
    1/2 cup medium zucchini, chopped
    1 cup canned red kidney beans
    1 cup canned green beans, French style
    1/2 cup (4 oz.) Bolthouse Farms carrot juice
    Mrs. Dash Original or Chicken Herb blend (salt free)
    1 T. cracked blacked pepper

Tips

*This recipe does not contain added salt since there is sodium present in broth and canned foods.
*The carrot juice provides yummy veggie flavor plus provides lots of Vitamin A!
*Make it heartier with the addition of your favorite pasta or rice
*Try white beans in place of or with the red kidney beans
*Add your favorite fresh or dried Italian herbs, such as basil or oregano
*Serve with breadsticks or rolls for a satisfying meal.


Directions

Place chicken broth and carrot juice in medium to large saucepan. Add chicken, veggies, and beans. Stir in spices. Bring to boil, then reduce heat and simmer for 5-10 minutes until zucchini, mushrooms, etc. reach desired tenderness. Serve immediately or refrigerate for later use.
