    57 gram Soy Boy - Smoked Tofu (comes in two squares with 2 servings in each square)
    2 slices New York Jewish Rye Bread,
    2 tbsp Kraft Light Done Right Thousand Island Dressing
    2 tbsp Wegmans Sauerkraut
    6 tbsp (to taste) Kikkoman Lite Soy Sauce
    6 sprays (as needed) I Can't Believe It's Not Butter, Original Buttery Spray
    Pam Cooking Spray


Also good with light butter (if you have the extra calories that day!


Spray skillet with Pam. Add soy sauce.

Cut one of the squares in half so that it still looks like a square only shorter, take 1/2 Square, slice that into 2 "square" slices.

Brown tofu on each side, allowing it to soak up the soy sauce.

Open can of sauerkraut, heat in microwave till warm (you only need 2 tablespoons).

To make the sandwich: place one slice of rye bread on clean skillet. Lay 1 tablespoon of Thousand island dressing, then tofu, then the sauerkraut, then put the one more tablespoon of thousand island dressing on the inside of the second slice of rye bread and lay it on top (with dressing facing in). Spray with butter spray and flip. Spray with butter spray.

Let grill on one side a couple of minutes then flip and let grill on the other side.

Remove from pan and enjoy immediately!
