Ingredients

1 lg. container organic spinach
1/2 medium onion, chopped fine
1 T. bacon grease (nitrate free)
1 T. butter
3 oz half and half cream
1/2 c. whole milk mozzerrella cheese
Bacon bits (optional
Tips
Is excellent leftover for a couple of days.
Directions
In a large skillet saute onion in bacon grease until translucent. Add spinach and cook until completely wilted. Drain spinach/onions in collander pressing to remove excess water. Set aside. In the skillet, melt butter. Add cream and cheese, stir until smooth. Add Spinach mixture back into skillet and combine thoroughly. Season with garlic salt (or salt and pepper).
Pour into a small casserole dish that has been sprayed with cooking spray. Cut boiled eggs in half and place throughout the spinach mixture with the yolk sides up. If you like, sprinkle a little more mozzerrella and bacon bits on top. Place in a 350 degree oven and bake for 20 minutes.
