Ingredients

    -2lbs green beans
    -2 cans tomato sauce
    -4 large zucchini squash 0.5in slices
    -2 large potatoes medium dice
    -2 tbsp extra virgin olive oil
    -1 large onion medium dice
    -2 cups water (may add more or less, enough to cook)

Directions

-Chop onions to medium dice and cook over medium heat until translucent
-Add tomato sauce, water, green beans, squash & salt/pepper to taste
-Cover simmer over medium low heat (reduce heat if needed) until potatoes and green beans are soft. Stir every 10-15 minutes
-If necessary, remove cover and simmer to reduce and thicken sauce.



Serving Size: Makes 5 Equal Servings
