Ingredients

Crepes:
- 1egg
- 1.5 oz cream cheese ( i use full fat, softened)
- pinch of good tasting Stevia powder
- .5 tsp cinnamon ( or more if you like)
- .5 tsp butter for frying
Apple Filling:
- 1 medium apple ( I used unpeeled)
- 2tbsp Unsweetened Applesauce
- 1tsp corn starch
- 1tsp cinnamon
- .25 tsp good tasting Stevia powder
- .5 tsp vanilla extract
- 1 tbsp water
- zip lock bag
Ricotta Topping:
- 2 heaping tbsp whole milk ricotta cheese
- 2tbsp half and half
- .25 tsp vanilla extract
- .25 tsp good tasting Stevia powder
Tips
- can be made with honey or sugar instead of Stevia.
- The recipe is very easy and quick to make.
Directions
For the crepes:
1. Beat the cream cheese with cinnamon and Stevia.
2. Add an egg and continue beating until no lumps remain.
3.Heat the butter on a medium skillet.
4. Turn heat to medium - low and spoon about 3 tbsp of the batter and swirl around the pan.
5. Fry for 4 minutes until set on top, then flip for another 2-3 minutes.
Apple Filling:
1. Slice the apples ( thick or thin)
2. Place the apples in a zip lock bag and add applesauce, corn starch, cinnamon, stevia, vanilla extract, and water.
3. Close the bag and toss to mix.
4. Open the bag just a tiny bit for a vent and place in a microwave for about 4 minutes. ( Adjust time depending on your apple slice thickness).
Ricotta Topping:
1. Place all ingredients in a blender and blend until smooth.
Assembly:
Put half the apple filling on half of the crepe and fold to close. Drizzle the ricotta topping on top. Enjoy!
