Ingredients

    1 pound daikon radish
    1 tsp. salt
    1/2 carrot
    1-1/2 teaspoons salt
    1 carrot
    1 scallion
    1 tbsp. peanut oil (you can really use any kind of oil)

    Dressing:
    2 tsp. sugar
    2 tsp. cider vinegar
    1/2 tsp. sesame oil

Directions

Peel and shred daikon (or cut into thin ribbons with veg. peeler). Put in a colander, toss with salt and leave to drain over a bowl for about 1/2 hour. Meanwhile shred carrots and thinly slice the scallion into a large bowl and mix the dressing ingredients in a small dish. After about 1/2 hour, give the daikon shreds a good squeeze to get as much liquid out as possible and toss with the carrot and scallion. Heat peanut oil in microwave for about 30 seconds and toss into the salad.
