Ingredients

    1 can of Salmon, drained & shredded
    2 eggs
    1/2c chopped green peppers
    1/2c chopped red peppers
    2-3 green onions, finely chopped
    1/2c shredded low-fat cheddar cheese
    Cooking spray

Directions

Mix together all ingredients except cooking spray. Spray muffin tin with cooking spray and place mix in each cup. Bake at 325 for 20-25 minutes, until the mixture is set. The muffins are good either hot or cold.
