Ingredients

Tomatoes Diced- Sev=.5 cup., 3.5 serving (remove)
Tomatoes Sauce 8 oz- serv= .25 cup, 4 serving (remove)
Olive Oil, 1 tbsp (remove)
Onions, raw, 1 medium (2-1/2" dia) (remove)
Salt, 1 dash (remove)
Garlic, 3 tsp (remove)
*Peppers, sweet, red, fresh, 1 tbsp (remove)
Italian Sausage- Bulk- serv=1oz., 16 serving (remove)
Parmesan Cheese, shredded, 10 tbsp (remove)
Pepper, black, 1 dash (remove)
*Ricotta cheese, fat-free, 8 oz (remove)
Basil, 3 tbsp (remove)
Directions
Pour tomatoes and juice into 1 qt measuring cup and add enough water to make 1qt. Heat oil in skillet until shimmering, brown onions and 1/2 tsp salt for 5 min. Stir in garlic and red pepper until fragrant about 30 sec. add meat and cook until no longer pink, about 4 min. Scatter pasta over meat but DO NOT stir. Pour tomatoes and juice and sauce over pasta, cover and simmer until pasta is tender, about 20 min. Remove skillet from heat and stir in 1/2c Parmesan. season w/ salt and pepper. dot with heaping tbsp ricotta, cover and let sit off heat for 5 min. sprinkle with basil and 2 tbsp Parmesan.
