Ingredients

    2 cups quinoa cooked in chicken stock
    2 skinless chicken breast poached and chopped
    1 small red onion chopped
    4 tbsp craisins chopped
    1/2 cup toasted almond slivers
    1/4 cup aged balsalmic vinegar
    Salt and pepper to taste.

    Mix all ingredients well and place in fridge to cool. This is one of those recipes that the longer it sits the better it tastes!! Enjoy!!

Tips

Allow this chicken salad to cool thoroughly. The longer it sits the better it tastes!!!


Directions

Poach your chicke breasts in chicken stock until done.
Utilize the stock to poach your rinsed quinoa for 20min.
(rinsing your quinoa allows it to cook faster)
Chop the chicken and onion and craisins
toast your almonds in a dry skillet
Mix all ingredients together with balsalmic vinegar and salt and pepper to taste
