Ingredients

    6 Plum Tomatoes, cut into wedges
    1 tsp. Extra Virgin Olive Oil
    1 Tbsp. Balsamic Vinegar
    Kosher Salt
    Fresh Basil, chiffonade
    *1/2 cup Ricotta Cheese (part skim)

    *Note: If you use fat free or whole ricotta cheese, it will change the nutrition information for this recipe.

Directions

-Cut tomatoes into wedges and place in a mixing bowl.
-Season with salt.
-Drizzle with olive oil and balsamic.
-Toss with fresh basil.
-Divide into 2 bowls for serving along with 1/4 cup (in each bowl) of ricotta cheese.

Serving Size: Makes 2 Servings.
