Ingredients

    3 large sweet potatoes
    2 cups of Splenda or Sucralose for baking
    2 large eggs
    1 5 oz can of evaporated milk
    1 stick of melted butter
    1 tbs cinnamon
    1 tbs nutmeg
    1 tbs ginger
    2 tbs allspice
    2 tbs pancake syrup


Tips

You can use sugar free syrup and low fat evaporated milk to reduce calories. I don't suggest a butter substitute or just using egg whites. It messes up the texture and flavor.


Directions

Boil Sweet Potatoes until they are soft, approx 50 mins. Mash and add all other ingredients and blend well. Pour into frozen pie crust and bake for 45 mins.
