Introduction

Ingredients

    1 package Stove Top Stuffing Mix for Pork (6oz)
    4 tbsp (1/4 cup) light butter
    4 oz chopped walnuts
    1 3/4 cup chopped apples (about 1 large apple)
    2 1/4 lbs pork tenderloin
    6 tbsp olive or canola oil

Tips

Can make ahead and freeze. To cook from frozen, roast pre-stuffed chops on HI for 40 minutes, with aluminum foil covering the stuffing. Then remove foil and roast for an additional 8 minutes on HI.


Directions

Make stuffing according to package directions, using the 4 tbsp of light butter. Once prepared, add walnuts and apples and mix well. Trim any visible fat from the pork tenderloin and cut into six, thickly cut chops. Cut into the side of each chop, creating a large pocket for the stuffing. Place chops stuffing side up on the 1" rack in the NuWave oven, and drizzle each with 1 tbsp oil. Add seasoning if you like. Place a small piece of aluminum foil over each chop to cover the stuffing. Roast for 18 minutes on power level HI, then remove the foil and continue roasting on HI for 8 minutes or until stuffing is golden brown.

Serving Size: Makes six 6oz pork chops with about 1/2 to 3/4 cup stuffing in each
