Introduction

Easy, light healthy salad or side dish with sweet potatoes and apples. Easy, light healthy salad or side dish with sweet potatoes and apples.

Ingredients

    2 Sweet Potatoes - cubed and slightly cooked
    1 large apple - cored and chopped
    2 stalks of celery - chopped
    1/3 to 1/2 cup of dried fruit (I used raisins, currants, and dried cranberries)
    1/2 cup slivered almonds (or other nut of choice)
    Asian Ginger Vinaigrette as needed - approximately 1/2 cup

Tips

You can easily change up the fruit or dressing to add variety. Just don't overcook the sweet potatoes or it will be a mushy salad.


Directions

Scrub sweet potatoes; cut into cubes and steam until slightly softened - approximately 10-15 minutes. Rinse sweet potatoes in cold water to stop cooking process; drain well. Mix sweet potatoes, apples, celery, dried fruit, and nuts. Toss lightly with Asian Ginger Vinaigrette. Serve with lettuce or alone as a salad or side dish.
