Ingredients

6 fresh egg whites
3 large eggs, beaten with egg whites.
2 cups shredded Arugula
1 cup chopped red pepper
1 cup chopped sweet onion
3 tsp fresh garlic, chopped fine
3 slices of turkey bacon, chopped
1/2 cup Kraft sharp cheddar, shredded
1 large whole red tomato, chopped
Tips
wait for this dish to "puff up" before pulling from oven. Can be easily stored and kept for about a week. Great for take a longs for work, etc...for a quick meal.
Directions
Beat Egg/Egg whites together. set aside.
cook on stove top, garlic, onion and turkey bacon. Once cooked (about 5 mins, bacon does not have to be crisp) remove from heat. Mix with all other ingreadiants into a 13x9 dish, except cheese.
Pour egg mix over dish, season with salt and pepper. Sprinkle with cheese and bake. About 20-25 minutes at 375.
Serving Size: makes 15 squares
