Ingredients

    6 cups raw black-eyed peas, rinsed
    .5 cup onions, chopped
    .5 cup celery, chopped
    .5 cup bell pepper, chopped
    2 lb corned beef brisket, trimmed with seasoning packets
    2 capfuls Mrs. Dash Herb and Garlic
    pinch of cayenne or red pepper flakes
    2 tsp dried thyme
    2 tsp herbes de Provence

Tips

Freezes easily. Do not salt until it's in the plate; it's easy to over do it!!!


Directions

Toss all ingredients in a crockpot with 4 cups of water. Set on high for one hour and then leave on low for the remaining 7 hours. The longer it cooks, the more the brisket will shred. Serve alone or atop a sliced and roasted medium-sized potato.
