Ingredients

1.5 TBSP Yeast
1.5 TBSP Sugar
1 1/8 C Warm Water
1 TBSP Olive Oil
.5 tsp Salt
2.5 - 3 c Whole Wheat flour
Tips
Can be stored in an air tight container up to 1 week
Directions
Mix warm water, sugar, and yeast. Let sit for approx 5 min until foamy. Add olive oil
Combine 1 cup flour and salt. Mix liquid yeast with flour stir.
Stir in remaining flour until a ball forms. Kneed on a floured surface until soft.
Place back in oiled bowl and let sit, covered, for approximately 1 hour (time to rise)
After dough has risen, punch down, take out of bowl and form a loaf.
Cut equal size portions. Roll out each portion on a floured surface to desired thickness. Cover with damp towel so they don't dry out
Preheat oven to 500 degrees.
Place on wire rack and in oven. The steam will cause the dough to bubble into a pocket. Take out once one big pocket.
