Ingredients

    Lentils, 400 grams
    Chorizo, pork and beef, 200 grams
    Leeks, 1 leek
    Any left over veg like:
    Green Peppers 1
    Onions, raw, 2 large
    Beef stock, 0.5 cup
    Garlic, 3 clove
    Del Monte Diced Tomatoes, No Salt Added, 2 cup
    Some spices like:
    Chilli powder to taste
    Koriander powder 0.5 ts
    Kurkuma powder 0.5 ts

Tips

This is a to taste recipe and don't worry about the right spices or veg. It will come out nice. Trust me!


Directions

Cuts chorizo in slices, not to thin (remove skin). Cut onions and garlic and fry with the chorizo in 1 tbsp of oil on medium heat for about 5 min. Add spices to taste.

Cut all left over veg from your fridge and add. Fry for 5 more min. In the meantime wash lentils well. Add lentils and dices tomato's. Add stock till well covered with liquid.

During cooking you may need to add water as lentils will absorb liquid while cooking. Leave till lentils are soft.
