Ingredients

1 c. dry lentils
2 c. water
1 large can crush tomatoes with juice
1 green pepper, chopped
2 T. Herbes de Provance
1 T. capers
Tips
Serve with a teaspoon of apple cider vinegar or sherry, salt and pepper to taste. Good with a little cheese to complete the protein.
Directions
Cook at a simmer about 4 hours, stirring occasionally, until lentils are soft. Add water as lentils absorb the juice. Add salt only after cooking or lentils will become tough. Add salt to taste.
