Introduction

Number of Servings: 12

Ingredients

    1 can black beans
    1 onion
    1 bell pepper
    6 cloves garlic
    2 cups bread crumbs
    2 eggs
    2 Tbsp cumin
    0.5 Tbsp black pepper

Tips

Patties will be soft when they come out of the oven. Let them sit for 5-10 min and they will solidify much more.

For a more Mexican flavor add 2 Tbsp fresh chopped cilantro and substitute 1/2 cup diced tomatoes for 1/2 cup onion.


Directions

Puree drained black beans in the blender until consistent. Remove and place in a large mixing bowl.

Puree chopped onion, bell pepper and garlic until consistent. Remove and add to beans.

Mix eggs and spices together. Add to beans and veggies.

Add bread crumbs to bean mixture and still until consistent.

Use a 1/3 cup measure to scoop out the bean mix and drop onto greased baking sheet or pan. Bake for 12 minutes on each side at 375 degrees.
