Number of Servings: 4

Ingredients

    3 cups cooked rice (or 1 cup raw rice, cooked)
    1 16 oz. jar salsa, as hot as you like
    1 15 oz. can pinto beans, rinsed and drained.

Directions

Preheat oven to 350. Spray a casserole dish. In a mixing bowl, mix all three ingredients together. Spoon into casserole dish. Cover and bake for 30 minutes or until hot. Makes about 5 cups total, or 4 servings of 1-1/4 cup each.

NOTE: You may make this with leftover rice (for example from Chinese Take-out) or you may use 3 cups of cooked brown rice for better nutrition.

    This is so simple and tastes quite good! I substituted Black Beans for the Pintos and it worked just as well. Thanks for sharing this recipe - I will definitely make it again! - 9/18/09
