Introduction

Ingredients

    1 1/2 cups sugar
    1 cup applesauce
    1/4 cup canola oil
    3 eggs
    2 cups all purpose flour
    1 1/2 tsp cinnamon
    1/4 tsp grond nutmeg
    1 tsp baking soda
    1 tsp vanilla
    3 to 4 cups shredded carrots
    1 cup corsely chopped nuts (walnuts)

Tips

You can serve plai or with powdered sugar or even low fat cream cheese icing.


Directions

Heat oven to 350. Grease cup cake pans/liners. Mix sugar ,oil, & eggs in a large bowl until blended: beat 1 minute. Stir in remaining ingredientsexcept carrots & nuts: beat 1 minute. Stir in carrots & nuts. You can add about a 1/2 cup raisins if desired. Bake 30 to 40 minuts.
