Ingredients

    2.5 lb potatoes
    1/2 lb bacon
    2 T margarine
    1 small onion
    2 T flour
    4 c fat free milk
    1/4 t nutmeg
    2-3 c shredded cheddar cheese
    4 scallions
    sour cream (to top with)
    salt and pepper to taste

Tips

The sour cream was not included in the recipe's nutritional info calculation. All three cups of cheese were added to the calculation.


Directions

Bake potatoes at 400 for one hour. Cool and scoop out insides and mash. Cook bacon till crispy, cool and crumble. Chop onion and scallions and saute in margarine till soft. Add all but cheese, flour, about 1/2 cup milk and sour cream to pot and bring to a simmer. Let simmer 30 minutes. Blend remaining milk with flour and add to pot. Stir and continue simmering. Add 2 cups of cheese; stir, allowing cheese to melt. Serve topped with remaining cheese and sour cream, if desired.
