Ingredients

    1/2 cup dry oats
    1/4 cup fat-free cottage cheese
    1/4 cup blueberries (fresh/frozen)
    1 extra large AA egg (reduce fat by excluding yolk)
    1 extra large AA egg white
    1 tsp valnilla extract
    Splenda (to taste)
    Cinnamon (to taste)

Directions

This recipe is for 1 single serving size. I usually will make 5 days worth so my breakfast is set for the week.

Combine all ingredients in blender until smooth texture. Spray pan with non-stick cooking spray. Cook on medium heat until firm and golden, flip and repeat.

Try this recipe with other fruits (stawberrie, banana, etc.)

Note: If you make a few days worth, each serving will measure almost 8 oz. Enjoy!

    This is a good recipe. The consistency is a little hard to get right at first. it is easy to blend it too much and it ends up runny. It works perfectly if it is refrigerated for a while first.

    I also add a scoop of protein powder.

    Just what I was looking for - something with a lot of protein that I can make ahead of time and save for quick heating up in the mornings. I used a tsp of honey instead of splenda. This is quite tasty with some fresh fruit on the top, and very filling. Thank you! - 7/7/13
