Ingredients

8 oz dried lentils
4 chicken thighs
2 medium onions, chopped
16 oz frozen cauliflower
8 oz frozen spinach
1 small sweet potato, chopped
pinch red pepper flakes
1 tsp celery seed
6-8 C water
Tips
If you are not worried about sodium counts, you can add a couple of chicken buillion cubes when you simmer the chicken.
Directions
1) Simmer chicken thighs, celery seed and onions in 6 cups of water for one hour.
2) Pull out thighs from pot, remove skin and bones, chop meat and set aside.
3) Add lentils, cauliflower, spinach, sweet potato and red pepper flakes to the cook pot and simmer until lentils are cooked the way you want them.
4) Add chopped chicken meat, stir, and enjoy.
