Ingredients

    2 c. Flour
    1/2 c. sugar
    2 tsp. baking powder
    1 tsp. salt
    1 egg
    1 c. milk
    1/2 c. unsweetened applesauce
    1/2 c. craisins
    1/2 c. blueberries ( fresh or frozen)
    2 tsp. sugar

Directions

Preheat oven to 400 F. Spray muffin tins with non-stick spray.

Combine flour, 1/2 c. sugar, baking powder, and salt in medium bowl, Combine milk, applesauce and eggs in small bowl, Add liquid ingredients to dry, stirring until dry ingredients are moist, Stir in blueberries and craisins. Fill tins 2/3 cups full. Sprinkle with remaining sugar.
Bake at 400 F for 20 to 25 minutes or until golden.
