This recipe is AMAZING!!! I make these all the time and like them better than any other pancakes Gluten Free or otherwise. If you like coconut and vanilla these are for you! They are delicious on their own with no toppings. For 255 calories you get 12 grams of fiber of the 27 total carbs... and 11 grams of protein.Saturday Mornings.... PANCAKES. Number of Servings: 4
Ingredients

12 Tbs. coconut flour
3/4 c. egg whites (I like 100% Egg Whites)
1 c. unsweetened applesauce
1 1/3 c. canned coconut milk
3-4 packets NuStevia, or other sweetener to taste
1 Tbs. pure vanilla extract
1 tsp. baking soda
1 tsp. apple cider vinegar
Dash of cinnamon.
Pam for skillet.
Tips
I prefer A Taste of Thai canned coconut milk---it has the BEST flavor.
Directions
Heat a non-stick skillet or pan to medium-high heat. Spray with Pam.
Mix all wet ingredients.
Combine with all dry ingredients. The batter will have an almost "fluffy" consistency to it. Stir until all the lumps are gone.
Plop on skillet in small amounts, you will have to spread the batter a bit thinner with a utensil.
Cook, flip. EAT.... REPEAT.
