Ingredients

-2 large carrots
-1 12 oz can of corn
-1 large sweet potato
-1 1/2 cup of cooked chickpeas
-3/4 cup of chopped onions
-1 1/2 cup of canned tomatoes
-2 cups of vegetable broth
-1 Tbsp of canola oil
-1 tsp of cinnamon
-1 tsp of cumin
-2 tsp of taco seasoning
Directions
-Boil the sweet potatoes and carrots until almost cooked
-Sautee the onions with the oil for about 5 minutes, add chickpeas, carrots and corn and sauté for another 2 minutes
-Add sweet potatoes and tomatoes and saute for another 5 minutes
-Add the vegetable broth and spiced
-Continue to simmer of low-medium heat for 10 minutes before serving
