Introduction

Number of Servings: 12

Ingredients

    1 cup almond flour
    1/2 c brown sugar
    1/4 tsp soda
    1/2 tsp baking powder
    2 whole cooked mandarin oranges or 3 California cuties
    ( cook whole for about an hour and puree )
    1/2 cup unsweetened cocoa powder
    pinch of salt
    2 extra large or 3 medium eggs
    1/4 of unsweetened applesauce
    1/4 tsp cinnamon
    1/4 tsp ground cardamon (optional)

Tips

nutritional value was based on 12 small muffins.
You could use this for desert if you added a sauce or whipping cream.


Directions

Mix dry ingredients thoroughly
Mix eggs, sugar and cooled oranges and applesauce well
Combine wet and dry ingredients lightly

Bake in teflon muffin tin lightly oiled for 15 - 22 minutes at 350 or until knife inserted comes out clean
Makes 12 small or 6 large muffins
