Ingredients

1 Pork Tenderloin, about 18 oz
1/2 cup Bread crumbs
1/2 cup White wine
1/3 cup grated Parmesan Cheese
1/4 cup Dijon Mustard
1/4 cup dried Parsley (more if using fresh)
1/2 tsp Salt
1/2 tsp dried Thyme
2 cloves minced Garlic
1/4 tsp Pepper
Directions
Preheat oven to 375
Spray baking dish with cooking spray
Stir mustard and garlic together and spread over meat
Mix bread crumbs, cheese and remaining seasonings together and shake over meat (might roll if you want an all-over coating)
Add wine to bottom of dish to give flavor and prevent meat from drying out; avoid pouring too much over breadcrumb mixture
Bake covered for for about 15 minutes (to keep moist) and uncover for remaining time
Let pork rest 5 minutes before slicing
