Ingredients

    1-12 oz. can of chicken white meat only
    1-14.5 oz. can of black beans
    1 cup of sour cream (plus additional if you want to serve with extra)
    1 cup of enchilada sauce
    1 cup of shredded cheese
    6 large tortillas or 12 small tortillas

Directions

Drain the chicken and then break it up with a fork. Drain and rinse the beans. Mix the sour cream, enchilada sauce (reserve 1/4 cup) and cheese (reserve 1/4 cup) thoroughly. Then add the chicken and beans. Warm tortillas slightly, so they are easier to work with. Lay out the tortillas and divide mixture evenly among all tortillas. Roll up and put in a 9x13. Bake at 350* F for 30 minutes. For the last 5 minutes, sprinkle reserved amount of cheese and enchilada sauce on the top to melt.
