Salmon Fillets Roasted In Butter

High heat gives the salmon fillets a lovely bit of crust, but makes over cooking a danger here. Be sure to remove the fish from the oven before its center is completely opaque. The combination of butter and oil is both rich and fragrant, but you can use all butter or all olive oil if you wish.
2 tablespoons butter
2 tablespoons olive oil
1/2 teaspoon salt
1 1/2 pounds salmon fillets
salt and pepper to taste
Preheat oven to 500. In a small saucepan over medium heat melt butter, add oil and salt. Spread half the butter mixture in bottom of a shallow roasting pan. Place salmon fillets skin side up. Sprinkle with salt and pepper. Drizzle the remaining butter mixture over the fish. Roast for 5 minutes and carefully turn the fish. Roast until the interior is nearly but not completely opaque, about 5 minutes more. Remove salmon to a platter and pour pan juices over it.
