Ingredients

1 C whole wheat flour
2 tsp baking powder
1/2 tsp salt
1/2 C creamy peanut butter
2 1/2 Tbsp sugar
2 Tbsp olive oil
1 egg
1 C milk
1/8 cup mini m&ms
Tips
next time I will try it with honey instead of sugar, the batter was really thick so I could add more milk/water too to make thinner cakes.
Directions
In a large bowl combine flour, baking powder and salt.
In another bowl mix together peanut butter, sugar and oil until smooth
Add in egg and milk.
Pour milk mixture into flour mixture and stir until blended. Do not overmix. It will be thick!
Heat griddle to 350
Pour batter onto griddle using a 1/4 cup cookie scoop and cook until bubbles appear on the surface and then flip. Cook on second side for a few more minutes.
Serving Size: Makes 12 3-4 inch pancakes
