Number of Servings: 6

Ingredients

    10 eggs
    1/2 red, yellow or organge bell pepper
    1/4 yellow onion
    1 small garlic clove
    2 cups fresh spinach
    1/2 tsp cajun seasoning
    1/4 cup swiss cheese (shredded)

Tips

Eat immediately, or refrigerate tightly covered and enjoy for breakfast on busy week day mornings.


Directions

Finely dice the bell pepper, onion and garlic clove. Spray skillet with olive oil and sauté vegetables until tender. Chop the spinach. Blend eggs and cajun seasoning in a blender or magic bullet until frothy. Spray a 12 tin muffin tin with non-stick spray. Evenly distribute the spinach, sautéed veggies and cheese into each tin. Pour over the egg mixture; fill each cup 2/3 full. Bake in a 350 degree oven for 11 - 12 minutes or until the eggs feel firm. Do not overcook as the eggs will continue to set as they cool.

Serving Size: Makes 6 servings (2 muffins each)

    Very Good
    Love this one, I have them for brunch ( I don't eat breaky) and they keep me quiet full! Just needs a little more salt and would love to try them with some drained sun dried tomatoe. - 5/8/13
