Introduction

Delicious, filling and chock full of protein and whole grains! My kids can't get enough. Delicious, filling and chock full of protein and whole grains! My kids can't get enough.
Number of Servings: 13

Ingredients

    1 c corn flour or fine corn meal
    1/2 c whole wheat flour
    2 Tablespoons sugar
    1 teaspoon salt
    1/2 teaspoon baking powder
    1/4 teaspoon baking soda
    2 c nonfat cottage cheese
    2 eggs
    1-2 T water
    non-stick cooking spray

Directions

Mix all dry ingredients together. In a separate bowl, mix wet ingredients together. Make a well in the dry ingredients and pour in wet ingredients. Mix together until just incorporated. Batter is pretty thick, so add some water to make it looser or press down in pan with a wet spatula to spread.
Pour batter in 1/4c portions into hot pan on medium high and cook until edges look a little dry 3-4 min. Flip and cook the other side ~2 minutes.
