Ingredients

    1 can white beans (I used cannellini), reserve liquid

    2 cloves garlic (1/2 to start if you aren't REALLY into garlic)

    1/2 tsp salt

    1 tbsp tahini

    3 tbsp sunflower seeds

    2 tbsp green onion, chopped

    1 cup shiitake mushrooms

    1 tbsp olive oil

    Juice from 1/2 lemon

Directions

Put drained beans, garlic, salt and tahini in a blender. Begin blending and slowly add the shiitakes. If you like chunky hummus, use your best judgement with this part. Add the sunflower seeds and continue blending. Add the olive oil and continue blending. Add the lemon and green onion and continue blending. If you like your hummus a bit thinner, add 2-3 tbsp of the reserve liquid from the beans and continue blending.
Place in a bowl and top with some extra green onions.

Serving Size: Makes 8 servings 1/4 cup each
