Ingredients

    Bob's Red Mill Garbanzo and Fava Flour, 1.25 cup
    Water, tap, 1 cup (8 fl oz)
    Brown Sugar, .25 cup, packed
    Flaxseed, 1 tbspSmart Balance Peanut Butter, 2 tbsp
    Agave Nectar (Wholesome Organic Blue Agave), 2 tbsp
    Canola Oil, 2 tbsp (*1 in the batter, 1 for frying)
    Vanilla Extract, .5 tsp
    Cinnamon, ground, .5 tsp
    Nutmeg, ground, .25 tsp


Tips

If this is too sweet for your taste, try omitting the brown sugar and/or reducing the amount of agave nectar.


Directions

Mix all ingredients (minus 1 tbsp of the canola oil) thoroughly in a mixing bowl with a wire whisk. Spread one tablespoon of canola oil with a plastic spatula on an electric skillet heated to 375 degrees. With a ladle, scoop about 1/2 cup of pancake batter and drop on skillet for each cake. Flip after 2-3 minutes. Cook another 2-3 minutes on opposite side. Should be sweet enough to eat without syrup.
