So good and so fresh tasting. Gets me my pizza fix but with healthy fats and good source of protein, not to mention arugula and tomatoes are packed with vitamins. So good and so fresh tasting. Ingredients

2tsp pesto sauce
1 whole grain pita
1.5 cups of Arugula
1/4 cup chopped tomatoes or halved grape tomatoes
1 tsp olive Oil
1 tbsp lemon juice
1/4 cup rinsed and drained white beans
1 tbsp pine nuts
Directions
Spread 2 teaspoons pesto ona whole grain pita; broil until golden. Toast pine nuts in a dry skillet over medium heat. Toss Arugula, tomatoes, Pine Nuts, White beans, the olive oil, and lemon juice. Salt and pepper to taste. Top pita bread with salad mixture and enjoy!
Serving Size: this makes one serving. I usually make 4 servings of this at a time for my husband and I to have one dinner and one each for lunch.
