Ingredients

    1 small spaghetti squash, cooked & shredded
    1 tblsp. oil (olive or vegetable)
    1 tsp brown mustard seeds
    3 tblsp. butter
    1/2 cup chopped onion (i used green)
    2-3 cloves garlic, minced
    2 tsp minced fresh ginger
    1 tsp cumin seeds
    1/2 tsp ground coriander
    1/2 - 1 cup chopped tomato
    1 small serrano chile, seeded and minced (i used jalapeno)
    1/2 tsp salt
    1/2 cup coursely chopped cilantro (optional!)


Directions

-cut squash in half, clean out seeds, etc, place on plate with 1 tblsp water and cook for about 5 mins in the microwave. Shred with fork.

-heat oil in pan, add brown mustard seeds and heat til all are "popped" (about a minute), add butter, onion, minced garlic, minced ginger and cook a few mins., add tomato and cook another couple of mins then stir in the "spaghetti" and heat up.

Serving Size: makes about 3-4 servings
