Ingredients

1 cup dry quinoa, cooked.
1 can black beans, rinsed
1 red bell pepper, diced
1 green bell pepper, diced
½ red onion, diced
¼ cup cilantro, chopped
1/3 cup lemon juice
Extra virgin olive (I used my Misto and sprayed for about 10 seconds)
1 tbsp cumin
1 tbsp chile powder
½ tbsp. garlic powder
Salt and pepper to taste
Directions
Cook the quinoa and let cool. When cooled down, mix all the ingredients together and serve! It couldn’t be easier and this made 5 servings so enough to eat throughout the week!
