Introduction

So easy and what my Mom used to fix. I tweaked it a bit to make it healthier and serve the veggies on the side so the kids wouldn't freak out. So easy and what my Mom used to fix. I tweaked it a bit to make it healthier and serve the veggies on the side so the kids wouldn't freak out.

Ingredients

3 cans tuna packed in water
3 boxes of shells and cheese/macaroni and cheese
1 can fat free/low fat cream of mushroom soup

Tips

I love to add peas to mine but I don't do it while I cook it because my children wouldn't eat it. I give them peas on the side and just mix mine into my casserole on my own plate. This is excellent with some low fat cottage cheese or fruit as an additional side.

Directions

Cook the shells and cheese according to package directions, drain the noodles and put it all back in the pot. Add the cheese sauce, some spray butter or low fat margarine to the noodles and mix. Then add the cream of mushroom and tuna to the macaroni and cheese. Stir until creamy. (Optional) You can put it in a 13x9 glass dish, cover with Parmesan cheese and bake it at 350 for about 15 or 20 minutes if you want a fancier version.

Serving Size: Makes around 10 servings.
