Introduction

Make this soup with a leftover baked ham bone with some meat left on it. Make this soup with a leftover baked ham bone with some meat left on it.
Number of Servings: 8

Ingredients

    1 lb Great Northern Beans soaked overnight per package directions
    Ham Bone with ham
    Water to cover ham bone and then some (Approx 8 cups)
    2 carrots peeled and sliced or diced
    1 stalk celery sliced
    1 Medium Onion Diced (about a cup)
    1 Bay Leaf (fresh or dried)
    2 pinches french thyme or 2 fresh springs about 3 inches
    salt to taste


Directions

Soak Beans overnight according to directions.
In a large pot add ham bone and water, simmer for 45 minutes, remove ham bone and ham. Keep broth. To broth add all the other ingredients and simmer for about an hour. After ham bone cools remove ham from bone, pick ham only (no fat) and dice. Return ham to pot to simmer with the rest of ingredients. Taste broth halfway through and add salt if necessary.
