Ingredients

    2 10-16 0z package of frozen Green Peas - or use fresh
    1/2 Large Sweet Onion -chopped
    3 Cloves Garlic - minced
    2 Stalks Celery - chopped
    1 Tbsp Olive Oil or Coconut Oil
    4 Cups Vegetable Broth (Low Sodium)
    4-5 small fresh Mint Leaves
    Dash of Rosemary, basil, dill, sea salt and pepper to taste
    Garnish with Greek Yogurt and Mint Sprig

Tips

If soup is too thick, thin with water. Too thin - thicken with some dehydrated instant potatoes.


Directions

Heat oil in a large pot, saute onion, garlic and celery. Pour vegetable broth into pot, add peas, and herbs cook on low to medium heat until a slow boil.
Continue to simmer 15 - 20 min. Pour all into Blender, food processor or use a stick blender. Blend til creamy. Heat back up on stove if needed, serve.
Serve with a spoonful of Greek Yogurt and mint sprig to garnish.
